4 Ingredient Strawberry Cookies

Super Easy Cookie from Cake Mix

I've already shared my Lazy Momma Chocolate Cookies with you but these a actually quite a bit different.  These are perfect for Valentine's Day (did you forget?!  Whip up a batch of these quick for your sweetie or the kiddos!).  Remember, it's all about the presentation.  Unless you are my kids, who couldn't care less about the presentation and are far more interested in the fact that Mom just gave them a cookie...

 

You will need (makes 2 dozen):

1 Box Strawberry Cake Mix

1 8oz container of Cool Whip (or similar)- I actually don't use the full container but almost

1 Egg

Powdered Sugar (this is to roll the cookies in, I use 1/2 cup but toss a lot of it at the end)

Optional: Red Food Coloring (for extra omph) and/or Chocolate chips (I've never tried but sounds yummy!)

 

Ok here comes the hard part....are you ready?  Mix the cake mix, whipped topping (I use almost all of it but not quite- I find it's too wet when I use it all) and egg together in a bowl. I let the topping sit out for a few minutes then use the folding method to incorporated it all.

 



After it's well mixed you could add any optionals or extras you'd like. The consistency will be wet and sticky.  The powdered sugar will help so coat up your hands a bit and roll into balls (I did mine about 1-2 inches).







Place the balls on a lined baking sheet, I used parchment paper but wax paper would do.  I lined my sheet mostly because it's really burnt and old and I was embarrassed to photograph it- but I think lining this cookie is best since it is so moist. Bake in a preheated 350* oven for 11-13 minutes (mine were done around the 11 minute mark).

That's it!!  Let them cool (I used a cooling wire I purchased from the dollar store...you'd think with all the baking and cooking I do I'd finally upgrade some of these items) and eat them present them nicely to your sweetie...
