Easy Chicken Casserole



This meal really is too simple and very frugal to make.  You can make it work for what you have or what your family likes.  That’s what makes this such a perfect recipe for anyone!


1 can cream of something soup- I use what I have on hand

1 cup chicken shredded or cubed (or 2 cans tuna would work…then it’s be tuna casserole, but you get my drift)

1 cup frozen veggies (or 1 can would suffice or fresh of course too).  I used a mixed medley here

1-2 cups Small Noodles, like elbows.  Use what you have or let the kiddos pick this- it makes it more fun when they help you make it or when it come times to eat.

Handful of cheese

Salt, Pepper, Garlic Powder (all to taste)

Approx ¼ cup of Bread Crumbs (optional but gives it the crunch on top)

Preheat the oven to 350. Boil water and cook your noodles.  While those are cooking toss your veggies in near the end.  When the noodles are tender but not mushy drain the water.  Now in the same pot (let’s not dirty more dishes than we have to!) put the cream of soup, chicken and season it up.  Mix it all together and then place in a lightly greased pan. Here I used two 8x8 pans. Top with the handful of cheese and sprinkle with bread crumbs.  Pop it in your preheated oven for about 15 minutes.  It’ll depend on your oven.  Basically, you are looking for a golden brown crusty kind of top. That’s it.  You’re done.  My entire family, kiddos and adults included, love this meal.  It’s creamy and filling and easy and cheap!
