DIY Homemade Caramel Sauce

This really is simple and oh so amazing on ice cream, in or on pie, with apple slices or in coffee (where it all started for me!).  I was spending some productive time on Pinterest when I came across this post by Thrifty NW Mom.  It seemed easxy enough and wouldn't you know I had everything needed in my pantry and fridge!

You'll need:

1 cup water
1 cup sugar
1 tbs butter
1/2 cup milk (I use Half and Half but the orginal recipe uses heavy whipping cream- any milk will do but will vary the taste a bit)

Start on medium high heat with the sugar and water mixed and keep stirring.



The mixture will start to boil.  When it does stop stirring and get ready to watch it.  You are waiting for a golden brown (Thirfty NW Mom calls it an amber color).  The lighter it is the less 'caramel' flavor it'll have.  I always get nervous on this part and tend to pull it early for fear it'll burn.  It took my mixture about 10 minutes (maybe?) to get this color. 




Once it's your desired color take the pot off the heat and add your butter stir through and then add the milk.  I usually use just a little less than the 1/2 cup- I find with a whole 1/2 cup it's a bit runny but still absolutely delish!  Keep stirring it'll seem like you did something wrong (there will be parts that harden quickly but remember you are adding cold milk to a super hot mixture) but just keep stirring.  You will soon get a smooth and a bit runny sauce (it will thicken up a bit). 



Store it in a container in the fridge (glass is best but I have a cool plastic container that's perfect for pouring so I let mine cool for a while before attempting to put it in).  ENJOY!!
